Tomato & Pomegranate Salad
(Ottolenghi-Inspired)
A vibrant, juicy salad bursting with color and Mediterranean flavors! Pomegranate seeds add a sweet pop, while za’atar and fresh herbs bring it all together.
You’ll Need:
2 pints mixed cherry tomatoes, halved
2 tsp za’atar
3½ tbsp olive oil
Seeds from 1 pomegranate
½ yellow bell pepper, thinly sliced
½ small red onion, thinly sliced

cup fresh basil, torn

cup fresh mint, torn
1½ tsp lemon juice
Flaky sea salt, to taste
3½ oz manouri or feta cheese, crumbled
How to Make It:
Toss tomatoes with za’atar, olive oil & salt. Let sit for 10 min.
Add pomegranate seeds, bell pepper, onion, basil, and mint.
Drizzle with lemon juice, toss gently.
Top with crumbled cheese & serve!
