Spicy Honey-Balsamic Pickles

Ingredients:
- 1 pound cucumbers, sliced
- 1 cup balsamic vinegar
- 1/2 cup honey
- 1/4 cup water
- 1 tablespoon salt
- 1 teaspoon crushed red pepper
- 1 teaspoon minced garlic
- 1 teaspoon dill seeds
- 1/2 teaspoon coriander seeds
- 1/4 teaspoon smoked paprika

Directions:
1. In a large bowl, mix the cucumbers, balsamic vinegar, honey, water, salt, crushed red pepper, minced garlic, dill seeds, coriander seeds, and smoked paprika. Stir until the honey and salt dissolve completely.
2. Transfer the mixture to a clean jar or container with a tight lid.
3. Seal the jar and refrigerate for at least 24 hours to allow the flavors to develop.
4. Your spicy honey-balsamic pickles will be ready to enjoy! They can be kept in the refrigerator for up to 2 weeks.

Tips:
- For an extra kick, add more crushed red pepper to your taste.
- Try adding a few slices of onion or a couple of cloves of garlic for added flavor.
- These pickles are fantastic on charcuterie boards, in salads, or as a zesty topping for tacos and sandwiches.
