Shrimp Bowl with Black Beans, Corn Salsa & Creamy Sauce
Ingredients:
For the Shrimp:
1 lb large shrimp, peeled and deveined
1 tablespoon olive oil
1 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional)
For the Corn Salsa:
1 cup fresh or frozen corn, thawed
1/4 red onion, finely chopped
2 tablespoons chopped cilantro
1 jalapeño, seeded and minced (optional)
Juice of 1 lime
Salt to taste
For the Creamy Sauce:
1/2 cup mayonnaise
1/4 cup sour cream
1 tablespoon chopped parsley
1 tablespoon lemon juice
1 clove garlic, minced
1/4 teaspoon salt
1/4 teaspoon black pepper
For the Bowl:
1 (15 oz) can black beans, rinsed and drained
Lime wedges, for serving
Fresh cilantro, for garnish
Instructions:
Prepare the Shrimp:
In a bowl, combine the shrimp, olive oil, paprika, garlic powder, salt, black pepper, and cayenne pepper (if using). Toss to coat the shrimp evenly.
Cook the Shrimp:
Heat a skillet over medium-high heat. Add the seasoned shrimp and cook for about 2-3 minutes on each side, or until they are pink and opaque. Remove from heat.
Make the Corn Salsa:
In a separate bowl, combine the corn, red onion, cilantro, jalapeño (if using), lime juice, and salt. Mix well and set aside.
Prepare the Creamy Sauce:
In a small bowl, whisk together the mayonnaise, sour cream, parsley, lemon juice, minced garlic, salt, and black pepper until smooth.
Assemble the Bowl:
In serving bowls, layer the black beans, cooked shrimp, and corn salsa. Drizzle with the creamy sauce.
Garnish and Serve:
