Spicy Herb Chimichurri Sauce

Ingredients
1 cup fresh parsley, finely chopped
1/2 cup fresh cilantro, finely chopped
2 tbsp fresh oregano, finely chopped
4 cloves garlic, minced
1 small red chili (or 1/2 tsp red pepper flakes)
1/2 cup olive oil
2 tbsp red wine vinegar
Juice of 1 lime
Salt and pepper to taste
Optional Add-ins
1 small tomato, finely diced (for extra flavor and texture)
1 tbsp capers, chopped
1/4 tsp smoked paprika
Instructions
Chop and Mix: Finely chop parsley, cilantro, oregano, garlic, and chili. Add to a mixing bowl.
Combine Ingredients: Stir in olive oil, red wine vinegar, lime juice, salt, and pepper. If using tomato, capers, or paprika, add them now.
Taste and Adjust: Adjust salt, acidity, or spiciness as needed.
Marinate: Let the sauce sit for 15-20 minutes for flavors to meld.
Store or Serve: Serve immediately or store in an airtight container in the fridge for up to 3 days.
Serving Ideas

Drizzle over grilled steak, chicken, or seafood.
Use as a dip for fresh bread or roasted veggies.
Swirl into soups or stews for a flavor boost.
