🧄 Easy Garlic Rosemary Focaccia Muffins 🌿

Ingredients:
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1/2 teaspoon garlic powder
1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
1/4 cup olive oil
1 cup warm water (about 110°F or 43°C)
1 tablespoon honey (optional, for a touch of sweetness)
Coarse sea salt (for topping)
Extra rosemary sprigs (for garnish, optional)
Instructions:
Preheat the Oven:
Preheat your oven to 400°F (200°C). Grease a muffin tin or line it with muffin liners.
Mix Dry Ingredients:
In a large mixing bowl, combine the flour, baking powder, salt, garlic powder, and chopped rosemary. Mix well to combine.
Combine Wet Ingredients:
In a separate bowl, whisk together the warm water, olive oil, and honey (if using).
Combine Mixtures:
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; it’s okay if there are a few lumps.
Fill Muffin Tin:
Divide the batter evenly among the muffin cups, filling each about 2/3 full. Sprinkle a little coarse sea salt on top of each muffin and add a small sprig of rosemary for garnish if desired.
Bake:
Bake in the preheated oven for about 15-20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
Cool and Serve:
Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature.
