Start your day off right with this delicious and nutritious breakfast bowl! Packed with protein and flavor, it’s perfect for a hearty morning meal. Here’s how to make it:

Ingredients:
For the Scrambled Eggs:

2 large eggs
1/2 tbsp butter
1/4 tsp salt
1/4 tsp black pepper
For the Roasted Sweet Potatoes:

1 small sweet potato, sliced
1/2 tbsp olive oil
1/4 tsp smoked paprika
1/4 tsp garlic powder
1/4 tsp salt
For the Sausage & Spinach:

1/2 cup smoked sausage, sliced
1/2 cup fresh spinach
1/2 tsp olive oil
For the Avocado:

1/2 avocado, sliced
Instructions:
Roast the Sweet Potatoes:
Preheat your oven to 400°F (200°C).
In a bowl, toss the sliced sweet potato with olive oil, smoked paprika, garlic powder, and salt. Spread them out on a baking sheet.
Roast in the oven for about 20-25 minutes, or until tender and slightly crispy, flipping halfway through.
Cook the Sausage & Spinach:
In a skillet, heat 1/2 tsp of olive oil over medium heat.
Add the sliced smoked sausage and cook until browned, about 3-4 minutes.
Add the fresh spinach and cook until wilted, about 1-2 minutes. Remove from heat.
Scramble the Eggs:
In a bowl, whisk together the eggs, salt, and black pepper.
In a non-stick skillet, melt the butter over medium heat. Pour in the egg mixture and gently stir until the eggs are cooked to your desired consistency.
Assemble the Breakfast Bowl:
In a bowl, layer the roasted sweet potatoes, sausage and spinach mixture, scrambled eggs, and sliced avocado.
