Ingredients:
For the Cauliflower:
1 head of cauliflower, cut into florets
2 cloves garlic, peeled and grated
1 heaped tablespoon harissa paste
1 tsp salt
½ tbsp olive oil
For the Yogurt Base:
3 tbsp vegan yogurt
1 clove garlic, minced
Pinch of salt
For Garnish:
Tahini (to drizzle)
Spring onions or parsley, chopped (optional)
Instructions:
Preheat the Oven:
Preheat your oven to 425°F (220°C).
Prepare the Cauliflower:
In a large bowl, combine the cauliflower florets, grated garlic, harissa paste, salt, and olive oil. Toss until the cauliflower is well coated with the mixture.
Roast the Cauliflower:
Spread the coated cauliflower florets on a baking sheet in a single layer. Roast in the preheated oven for about 25-30 minutes, or until the cauliflower is tender and slightly charred, tossing halfway through for even cooking.
Make the Garlic Yogurt:
While the cauliflower is roasting, mix together the vegan yogurt, minced garlic, and a pinch of salt in a small bowl. Set aside.
Serve:
Once the cauliflower is done roasting, remove it from the oven. Serve the roasted cauliflower on a platter, drizzled with tahini and topped with the garlic yogurt. Garnish with chopped spring onions or parsley if desired.
