Ingredients:
1 medium cauliflower, cut into florets
1 cup cherry tomatoes, halved
1/2 cup red onion, thinly sliced
1/4 cup Kalamata olives, pitted and sliced
1/4 cup fresh parsley, chopped
2 tbsp olive oil
1 tbsp red wine vinegar (optional)
Salt and pepper, to taste
Instructions:
Prepare the Cauliflower:
Bring a pot of salted water to a boil. Add the cauliflower florets and blanch for about 3-4 minutes until they are tender but still crisp. Drain and rinse under cold water to stop the cooking process. Let them cool completely.
Combine the Ingredients:
In a large bowl, combine the blanched cauliflower, cherry tomatoes, red onion, Kalamata olives, and fresh parsley.
