Mediterranean Steak Bowl with Tzatziki Dressing 🥩

Ingredients:
- 1 lb flank steak
- 1 cucumber, diced
- 1 cup plain Greek yogurt
- 2 cloves garlic, minced
- 1 lemon, juiced
- 1 tbsp olive oil
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 cups cooked quinoa
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- Fresh parsley for garnish

Directions:

Step 1: Marinate the Steak
In a bowl, mix olive oil, garlic, oregano, salt, and pepper. Coat the flank steak with the marinade and let it sit for at least 30 minutes.

Step 2: Prepare the Tzatziki Dressing
In a separate bowl, combine diced cucumber, Greek yogurt, lemon juice, garlic, salt, and pepper. Mix well to make the tzatziki dressing.

Step 3: Grill the Steak
Preheat a grill or grill pan over medium-high heat. Grill the marinated steak to your desired level of doneness, about 4-5 minutes per side for medium-rare. Let it rest before slicing.

Step 4: Assemble the Bowl
Divide the cooked quinoa into serving bowls. Top with sliced steak, cherry tomatoes, red onion, and a dollop of tzatziki dressing.

Step 5: Garnish and Serve
Sprinkle fresh parsley over the bowls for garnish. Serve the Mediterranean steak bowls with extra tzatziki dressing on the side.
