Blackened Spicy Salmon Bowl
Ingredients:
- 2 salmon fillets
- 1 tbsp olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp cayenne pepper
- 1/2 tsp dried thyme
- 1/2 tsp oregano
- Salt and pepper to taste
- 2 cups cooked quinoa
- 1 avocado, sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup sliced red onion
- Fresh cilantro for garnish
- Lime wedges for serving
Directions:
Step 1: Prepare the Spice Mix
In a small bowl, combine the paprika, garlic powder, onion powder, cayenne pepper, dried thyme, oregano, salt, and pepper.
Step 2: Season the Salmon
Rub the spice mix onto both sides of the salmon fillets.
Step 3: Cook the Salmon
In a skillet over medium-high heat, heat olive oil. Sear the salmon fillets for 4-5 minutes per side or until cooked through.
Step 4: Assemble the Bowl
Divide the quinoa into bowls. Top with sliced avocado, cherry tomatoes, red onion, and the blackened salmon.
Step 5: Garnish and Serve
Garnish with fresh cilantro and serve with lime wedges on the side.
