MEDITERRANEAN LAMB BOWL
Ingredients:
- 1 lb lamb, thinly sliced
- 2 tbsp olive oil
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 1 cup cooked quinoa
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/4 cup crumbled feta cheese
- Fresh parsley for garnish
- Lemon wedges for serving
Directions:
Step 1: Marinate the Lamb
In a bowl, combine the lamb slices with olive oil, cumin, paprika, salt, and pepper. Let it marinate for at least 15 minutes.
Step 2: Sear the Lamb
Heat a skillet over medium-high heat. Sear the marinated lamb slices for about 2-3 minutes per side until cooked to your desired doneness.
Step 3: Assemble the Bowl
Divide the cooked quinoa among serving bowls. Top with seared lamb, cherry tomatoes, cucumber, red onion, and feta cheese.
Step 4: Garnish
Sprinkle fresh parsley over the bowls for a pop of color and freshness.
Step 5: Serve
Serve the Mediterranean lamb bowls with lemon wedges on the side for a bright, citrusy flavor.
