Steak Bites with Creamy Mushroom Sauce

Ingredients:

For the Steak:
1 lb beef tenderloin, cut into 1-inch cubes
1 tablespoon olive oil
1 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
For the Creamy Mushroom Sauce:
1 tablespoon butter
1 tablespoon olive oil
1 onion, chopped
4 oz mushrooms, sliced
1/4 cup all-purpose flour
1 cup milk
1/4 cup heavy cream
1/4 cup grated Parmesan cheese
1/4 teaspoon salt
1/4 teaspoon black pepper
Instructions:
1. Prepare the Steak Bites:
In a bowl, combine the beef tenderloin cubes with olive oil, paprika, garlic powder, salt, and black pepper. Toss to coat the steak evenly with the seasonings.
2. Cook the Steak Bites:
Heat a large skillet over medium-high heat. Add the seasoned steak bites in a single layer (you may need to do this in batches) and sear for about 2-3 minutes on each side, or until browned and cooked to your desired doneness. Remove the steak bites from the skillet and set aside.
3. Make the Creamy Mushroom Sauce:
In the same skillet, add the butter and olive oil. Once melted, add the chopped onion and sauté for about 3-4 minutes until softened.
Add the sliced mushrooms and cook for an additional 4-5 minutes, or until the mushrooms are tender and browned.
Sprinkle the flour over the mushroom mixture and stir to combine. Cook for about 1 minute to remove the raw flour taste.
Gradually whisk in the milk and heavy cream, stirring constantly until the sauce thickens (about 3-5 minutes).
Stir in the grated Parmesan cheese, salt, and black pepper. Adjust seasoning to taste.
4. Combine:
Return the cooked steak bites to the skillet with the creamy mushroom sauce. Stir to coat the steak bites in the sauce and heat through for an additional 1-2 minutes.
5. Serve:
Serve the steak bites with creamy mushroom sauce over rice, pasta, or mashed potatoes. Garnish with fresh herbs if desired.
