Ingredients:

For the Chicken:

2 chicken breasts ๐Ÿ—
1 tbsp olive oil ๐Ÿซ’
1/2 tsp paprika ๐ŸŒถ๏ธ
1/2 tsp garlic powder ๐Ÿง„
Salt & pepper to taste ๐Ÿง‚
For the Veggie Rice:

1 cup cooked white rice ๐Ÿš
1/2 cup corn kernels ๐ŸŒฝ
1/2 cup peas ๐ŸŸข
1/2 cup diced bell peppers (red or yellow) ๐ŸŒถ๏ธ
1 tbsp olive oil ๐Ÿซ’
1/2 tsp dried oregano ๐ŸŒฟ
For the Broccoli:

1 cup steamed broccoli florets ๐Ÿฅฆ
A pinch of salt ๐Ÿง‚
Instructions:

Prepare the Chicken:
In a bowl, mix olive oil, paprika, garlic powder, salt, and pepper. Coat the chicken breasts with the mixture.
Preheat a grill or skillet over medium-high heat. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and juices run clear. Let it rest before slicing.
Make the Veggie Rice:
In a skillet, heat 1 tbsp of olive oil over medium heat. Add the corn, peas, and diced bell peppers. Sauté for about 3-4 minutes until the veggies are tender.
Stir in the cooked rice and dried oregano. Mix well and cook for an additional 2-3 minutes until heated through.
Prepare the Broccoli:
Steam the broccoli florets until bright green and tender, about 4-5 minutes. Sprinkle with a pinch of salt.
Serve:
