Ingredients:

For the Chicken:

2 chicken breasts 🍗
1 tbsp olive oil 🫒
1/2 tsp paprika 🌶️
1/2 tsp garlic powder 🧄
Salt & pepper to taste 🧂
For the Veggie Rice:

1 cup cooked white rice 🍚
1/2 cup corn kernels 🌽
1/2 cup peas 🟢
1/2 cup diced bell peppers (red or yellow) 🌶️
1 tbsp olive oil 🫒
1/2 tsp dried oregano 🌿
For the Broccoli:

1 cup steamed broccoli florets 🥦
A pinch of salt 🧂
Instructions:

Prepare the Chicken:
In a bowl, mix olive oil, paprika, garlic powder, salt, and pepper. Coat the chicken breasts with the mixture.
Preheat a grill or skillet over medium-high heat. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and juices run clear. Let it rest before slicing.
Make the Veggie Rice:
In a skillet, heat 1 tbsp of olive oil over medium heat. Add the corn, peas, and diced bell peppers. Sauté for about 3-4 minutes until the veggies are tender.
Stir in the cooked rice and dried oregano. Mix well and cook for an additional 2-3 minutes until heated through.
Prepare the Broccoli:
Steam the broccoli florets until bright green and tender, about 4-5 minutes. Sprinkle with a pinch of salt.
Serve:
On a plate, arrange the sliced grilled chicken, veggie rice, and steamed broccoli. Enjoy this nutritious and delicious meal! 🌟
