This Mediterranean ground beef stir fry is a quick and flavorful dish that’s perfect for a weeknight dinner! Packed with fresh vegetables and Mediterranean spices, it’s sure to please. Here’s how to make it:

Ingredients
1 pound ground beef
2 tablespoons olive oil
1 onion, chopped
3 cloves garlic, minced
1 red bell pepper, sliced
1 zucchini, sliced
1 cup cherry tomatoes, halved
1 teaspoon dried oregano
1 teaspoon paprika
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Feta cheese, crumbled (optional)
Instructions
Heat the Oil:
In a large skillet or frying pan, heat the olive oil over medium heat.
Cook the Onion and Garlic:
Add the chopped onion to the skillet and sauté for about 3-4 minutes, or until it becomes translucent.
Stir in the minced garlic and cook for an additional 1 minute, until fragrant.
Brown the Ground Beef:
Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes. Drain any excess fat if necessary.
Add the Vegetables:
Stir in the sliced red bell pepper and zucchini. Cook for about 3-4 minutes, until the vegetables are tender but still crisp.
Add the halved cherry tomatoes, dried oregano, paprika, salt, and pepper. Cook for another 2-3 minutes, allowing the tomatoes to soften slightly.
Garnish and Serve:
Remove from heat and garnish with chopped fresh parsley. If desired, sprinkle crumbled feta cheese on top for added flavor.
Serve warm, either on its own or over rice, quinoa, or couscous.
