For the Meatballs:
1 lb (450g) ground beef or turkey
1 small onion, finely chopped
2 cloves garlic, minced
¼ cup breadcrumbs
1 egg
1 tsp dried oregano
½ tsp salt
½ tsp black pepper
½ tsp paprika
1 tbsp olive oil (for frying)
For the Roasted Potatoes & Mushrooms:
1 cup baby potatoes, halved
½ cup mushrooms, sliced
1 tbsp olive oil
½ tsp salt
½ tsp black pepper
½ tsp garlic powder
For the Sautéed Spinach:
1 cup fresh spinach
1 tsp olive oil
½ clove garlic, minced
Salt & black pepper to taste
For the Rice & Sauce:
1 cup cooked jasmine or basmati rice
2 tbsp garlic aioli or creamy yogurt sauce Instructions:
Prepare the Meatballs:
In a large bowl, combine the ground beef or turkey, chopped onion, minced garlic, breadcrumbs, egg, oregano, salt, black pepper, and paprika. Mix until well combined.
Form the mixture into meatballs (about 1 inch in diameter).
Heat olive oil in a skillet over medium heat. Add the meatballs and cook for about 8-10 minutes, turning occasionally, until browned and cooked through. Remove from heat.
Roast the Potatoes & Mushrooms:
Preheat your oven to 400°F (200°C).
In a bowl, toss the halved baby potatoes and sliced mushrooms with olive oil, salt, black pepper, and garlic powder. Spread them on a baking sheet in a single layer.
Roast in the oven for about 20-25 minutes, or until the potatoes are tender and golden brown.
Sauté the Spinach:
In a small skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
Add the fresh spinach and cook until wilted, about 2-3 minutes. Season with salt and black pepper to taste.
Assemble the Bowl:
In a bowl, layer the cooked rice, roasted potatoes and mushrooms, meatballs, and sautéed spinach. Drizzle with garlic aioli or creamy yogurt sauce on top.
