Spiced Quinoa Fruit Bars

Ingredients:
- 1 cup cooked quinoa
- 1/2 cup almond butter
- 1/3 cup maple syrup
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon allspice
- 1/4 teaspoon salt
- 1 cup dried apricots, chopped
- 1/2 cup unsweetened shredded coconut
- 1/2 cup walnuts, chopped
- 1/4 cup chia seeds
- 1/2 cup dark chocolate chips (optional)
Directions:
1. Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking pan or line it with parchment paper.
2. In a large mixing bowl, combine the cooked quinoa, almond butter, and maple syrup. Stir until well mixed.
3. Add the cinnamon, nutmeg, allspice, and salt to the mixture. Mix until fully incorporated.
4. Fold in the chopped dried apricots, shredded coconut, walnuts, chia seeds, and dark chocolate chips (if using) until everything is evenly distributed.
5. Pour the mixture into the prepared baking pan and press it down firmly with a spatula or your hands to create an even layer.
6. Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown.
7. Once baked, remove from the oven and let it cool in the pan for about 10 minutes. Then transfer to a wire rack to cool completely before cutting into bars.
